1. Making Batter
First, you need to take a small size bowl. Then in a large bowl, add 2 bowls of Maida, 1 bowl of Suzy, half a bowl of Shredded coconut, a little salt, and 2 teaspoons of sugar. Now mix all the dry ingredients well together. Now you have to give 3 bowls of boiled milk. This time you have to beat it very well.
Since there is Suzy in it, the batter should be thinned a little and not too thick. Because Suzy draws a lot of water. Now cover it for 30 minutes.
Keep in mind that if the malpua mixer is beaten well, the malpua will swell nicely.
Now put a pan of gas and take 1 teaspoon of fennel in it. This fennel should be dry rost by lowering the gas flame. You don't need to do it for too long, you just have to roast it for 1-1.5 minutes. Now you have to break these dry roasted fennel in half.
2. Preparing sugar syrup
Now take 1 bowl of sugar and half a bowl of water in a pan. Now you have to melt the sugar by increasing the gas flame. Now you have to crush 3 small cardamoms in it.
This sugar syrup will not be too thick but not too thin. Need to make a sticky syrup. When you see that the syrup has become sticky, turn off the gas, now your sugar syrup is ready.
3. Making Malpua
To fry malpua, take white oil in a pan. Now you have to heat the oil well. To see if the oil is hot or not, you have to check it with 1 drop of batter. When the oil is perfectly hot, the flame should be medium.
Now you have to put the malpua in oil. Remember not to leave a lot of malpua in the oil at once, then the malpua will not swell well. Now fry each malpua till it becomes light reddish.
Once the malpuas are all fried, remove them from the oil and add them to the sugar syrup. Now put them in sugar syrup for 4-5 minutes.
Then the malpua should be picked up and placed in a large container to remove the extra syrups. Now your malpua is ready to eat, serve them to your all family members and enjoy it.
